From tea to mouthwash, countless items we use and consume every day contain mint. It’s so common, in fact, that it’s easy to forget what a culinary powerhouse this hardy herb is. Actually, herbs to be correct: “mint” is a general term that applies to dozens of varieties, including peppermint and spearmint, which are the most widely used. Grown around the world and used for centuries—both medicinally and as food—this leafy, bright-green perennial helps freshen breath, aid digestion and fight bacteria, and provides a fair amount of vitamins A and C and beta-carotene. It’s also the perfect way to punch up your cooking. Uniquely sweet and cooling, it’s used in a variety of cuisines, but particularly Middle Eastern, Mediterranean and Thai, where it works to balance the bold flavors and spices—as in the delicious dishes below.
